The Martell Story

In 1715, founder Jean Martell left his native homeland Jersey and arrived in France to develop the art of cognac. Travelling the land in search of the finest Eaux-de-vie, a spirit derived from fermented fruits, Martell also develops ties with local winegrowers that set the foundation for generations to come.

Following Jean’s death in 1753,  his widow Rachel Martell took over the family business, vowing to uphold her late husband’s vision and integrity. Rachel Martell runs Maison Martell according to an uncompromising philosophy – “I want only the best, without artifice.”

Half a century later, despite the continental blockade in 1808, an exceptional import license signed by King George III allowed Martell Cognac to be imported to England. Some might say an exceptional circumstance for an exceptional cognac.

Martell cognacs gained even more international fame in 1858, spreading worldwide as the first shipments arrived in China. Maison Martell achieved the English royal stamp of approval in 1911, as it is served at the coronation of King George V of England.

Fast forward to the turn of the millennium and the French brand launches its most renowned bottle to date, the Martell XO. With its power, intensity and distinctive arch-shaped bottle style, the exceptional whisky is savoured by millions across the globe, including Singapore.

Craftsmanship

What makes Martell truly so exquisite is the delicate craftsmanship that goes into each bottle. Built upon the four principles of terroir, distillation, ageing, and blending – every stage is meticulously supervised and executed with detailed precision. Firstly, the grape-growing areas of Cognac located in the Charente region of France, near the Atlantic Coast, encourage optimum growth of the region’s predominant grape variety Ugni Blanc. Coupled with the rich silica-clay soils of the Borderies chosen specifically by founder Jean Martell himself, this unique terroir lends the finest Martell cognacs their trademark depth and nuance in flavour.

Next, distillation is still performed in traditional copper pots to obtain exclusively clear wines. One of the only to do so, out of all the various Cognac houses, this process produces premium Eaux-de-vie which reveal the full character of the grapes.

After obtaining this, the ageing of the Eaux-de-vie over generous periods of time allows a beautiful transformation to take place. Oak barrels, gently burnt prior to ageing, embody that signature amber hue into the raw distillate as it ages, helping it develop the key touches to its aromatic personality.

Finally, at some point when the Martell Cellar Master deems it matured, the Eaux-de-vie is removed from the oak barrels and placed in glass demijohns to prevent further ageing. They are then kept under lock and key till they are used to make the rarest of cognacs.

In the summer of 1886, founder William Grant set out to fulfil a lifelong ambition. Supported and aided by his seven sons and two daughters, they began building his distillery by hand. Literally. Stone after stone, the family toiled for a year tirelessly till the structure’s completion. Naming it Glenfiddich, Gaelic for Valley of the Deer, the iconic stag would later be forever emblazoned front and centre of every bottle produced.

Water, air, and malted barley – a trinity of ingredients expertly crafted and refined to perfection before being bottled as the golden amber known as Glenfiddich whisky. So inspirational was the distillery that in 1961, 20th-century German designer Hans Schelger was motivated to develop the triangular bottle design we’ve come to know and love today. Once considered radical and wayward, the eye-catching tri-tripped bottle now adorns the shelves of cocktail bars in Singapore and worldwide.

One of the first brands actively promoted outside of Scotland in 1963, global consumers of the time accustomed to drinking blended whisky was immediately taken aback at the delights of the single malt brand. All credit goes to Sandy Grant Gordon, great-grandson of founder William, for advocating this international shift.

Never one to rest on their laurels, the Glenfiddich distillery went on to pioneer the Solera Vat in 1998. Through a revolutionary process of backfilling barrels and continuously ageing their contents, Glenfiddich elevated the notion of age-statements in whisky across the industry, a technique that is still used today by the Speyside distillery.

In 2001, Glenfiddich released the oldest bottle of Single Malt Scotch ever recorded. Bottled 64 years ago in 1937, it is rumoured that only 61 bottles remain from the original batch derived from Cask 843. Ten separate Warehouse Masters watched this cask bloom into the pinnacle of Single Malt Scotch, a true testament to the commitment of Glenfiddich in quality distillation.

Fast forward to 2021, despite the COVID-19 pandemic Glenfiddich has decidedly surfed on the wave that is social distancing measures. Understanding the shift towards home dining and smaller group gatherings, the dynamic brand has supported local efforts in Singapore via virtual events such as the 1887 Virtual Bar. Matching dollar for dollar donations, Glenfiddich has solidified its position as a cornerstone of the whisky and F&B industry in Singapore.

Signature Bottles

Continuing down our path of history, let’s take a look at some of the more unique bottles released by Glenfiddich past and present.

First off, we have the Glenfiddich 18 Year Old. One of their core bottles, uniquely matured in a cask made out of Spanish Oloroso Wood and American Oak to lend a rich, fruity, and robust oak flavour to the spirit.

Visually dark gold in colour, the first thing that hits you when you pour a dram of Glenfiddich 18 Year is the remarkably rich nose of ripe orchard fruit, baked apple, and robust oak. Complex in flavour, this whisky hits tasting notes of luxurious dried fruit, candy peel, and dates. When tasted, the 50 Year is initially sweet with hints of zesty orange marmalade and vanilla toffee, slowly cascading into floral-fruity undertones before ending with silky oak tannins and gentle smoke. As expected, the finish is exceptionally long with traces of oak and peat lingering in the mouth.

Lastly, a bottle for whisky collectors and cult Glenfiddich fans worldwide – the Glenfiddich Ultimate. Aged to 38 years old, each bottle of the Glenfiddich Ultimate comes in a special ornate decanter with an intricately cut crystal stopper, accompanied by a brass identification card. Rich gold in colour, the Glenfiddich Ultimate carries vibrant oak notes with a rich vanilla toffee aroma, with delicate floral character and fruits presenting over time. When sampled, there is a woody spiciness from the sherry butts that are complemented by layers of creamy bourbon and rich caramelised fruits. Ballantine Blended Scotch Whisky and its History

The lineage of Ballantine’s Scotch Whisky can be traced back to 1827, when a young 19-year-old George Ballantine, after apprenticing five years as a grocer, sets up a tiny grocery store in Edinburgh supplying a range of whiskies. Nine years later in 1836, George shifted his focus towards the art of ageing whiskies, using quality, hand-selected malts. Expanding operations, George also opened a bigger Ballentine’s shop with a new grocery store in South Bridge. Within half a century, Ballantine’s shops and warehouses export Ballantine’s blended whisky to a worldwide market. George Ballentine retires and his two sons take the reins of the family business in 1988.

Not long after, George Ballentine passes on. While his body shuffles off this mortal coil, his legacy lives on forever imprinted in the pages of history. The proof of which comes in 1895, when Ballantine’s was awarded a Royal Warrant by Her Late Majesty Queen Victoria. Talk about a royal seal of approval indeed.

Visually deviating from its younger cousins in tone, the Ballantine’s 21-Year-Old sports a more reddish hue as a result of extended ageing. When inhaled, the spirit blooms richly, with honey-sweet undertones and hints of apple and floral aromas. Additional years in the barrel have also benefited the flavours within the whisky, bringing forth a delicate balance of rich liquorice and aromatic spice. Ending on subtle and mellow notes of dried fruit, the Ballantine’s 21 Year Old leaves one wanting more after every sip.
